Ingredients (serves 2)

  • 0.41666666666667 pound pork ; or 6 cutlets
  • 0.16666666666667 teaspoon ginger
  • 0.66666666666667 teaspoon cumin
  • 0.33333333333333 teaspoon coriander
  • 0.33333333333333 teaspoon chili powder
  • 0.33333333333333 teaspoon paprika
  • 0.16666666666667 teaspoon salt
  • 0.66666666666667 tablespoon vegetable oil
  • 0.33333333333333 medium onions
  • 1.3333333333333 cloves garlic
  • 0.41666666666667 cup coconut milk
  • 0.33333333333333 tablespoon lime juice
  • 0.33333333333333 small bok choy
  • spaghetti ; as much as desired

    Directions

    Place cutlets in a plastic baggie and pound out to 1/4 inch thickness. Cut into strips. In a large shallow dish combine, ginger, cumin, coriander, chili powder, paprika and salt. Stir in pork strips and let stand 15 mins. Heat wok (or large pan) until very hot. Add oil and pork and cook until thickened. (2 to 3 mins) Remove contents to a plate and keep warm. Pour off all but 1 tablespoon of oil. Add onion and garlic and stir-fry for another 2 to 3 minutes. Slowly add coconut milk. Bring to a simmer but don't boil. Stir in lime juice and bok choy cook for 7 minutes. Add pork back in and cook covered for another 2 mins. Serve over noodles.

    I really enjoy this dish. I've made it twice. I will be making it for a 3rd time tomorrow for NYE lunch celebration. I used Cayenne Pepper instead of paprika.. great!!! You don't have to add Bok Choy if you don't want to. It just provides a crunchiness to the dish.
