Ingredients (serves 1)

  • 0.33333333333333 cup pumpkin seeds ; raw, washed and dried
  • 0.83333333333333 tablespoon sugar ; divided
  • 0.16666666666667 tablespoon olive oil
  • 0.041666666666667 teaspoon cumin
  • 0.041666666666667 teaspoon cinnamon
  • 0.041666666666667 teaspoon ginger
  • 0.16666666666667 pinch cayenne pepper
  • 0.33333333333333 teaspoon salt ; or to taste

    Directions

     Prep: 15 min | Cook: 30 min | Ready in: 45 min
    1. Line a baking sheet with parchment paper and preheat an oven to 300F (150C).
    2. Combine cumin, ginger, cayenne pepper, cinnamon and 3 tablespoons of sugar in a large bowl. Set aside
    3. Spread the pumpkin seeds on the lined baking sheet.  Spray with cooking spray and sprinkle them with salt to taste.
    4. Bake in the oven for 20 - 25 minutes or until lightly golden.
    5. Heat olive oil in a large skillet over medium heat. Add the seeds with the remaining 2 tablespoons of sugar.
    6. Cook and stir until the seeds have a caramelized coating, about 2 to 3 minutes.
    7. Stir the coated seeds into the bowl with the spice mixture. Toss to coat and allow to cool before serving.
